Mango Baobab Chutney

This delicious tropical chutney will go so well with your veggies, as a delicious dip or a spread on your gluten-free toast. You can even make a curry out of it!

It has a beautiful zing and unlike the regular chutney it’s super healthy. Free from refined sugar and bursting with tummy-friendly fiber and energizing Vitamin C from Organic Burst Baobab, digestive enzymes from mango and immune-supporting garlic and ginger.

INGREDIENTS 

  • 2 large mangoes, diced into chunks
  • ¼ cup lemon juice
  • ½ cup rice malt syrup
  • 2 cloves of garlic, minced
  • 2 tablespoons mustard seeds
  • 1 tablespoon ginger, fresh grated
  • 1 tablespoon desiccated coconut
  • 2 tablespoons Organic Burst Baobab
  • 1 tablespoon Organic Burst Chia

METHOD

  1. Place all ingredients except the baobab in a saucepan and simmer over a low heat for an hour, stir frequently and make sure not to burn the bottom as it reduces.
  2. When it has reduced down to a thick consistency, stir through the baobab and mix well.
  3. Cool and store in a jar for up to 4 weeks in the fridge.
