Zingy Tomato Chia Salsa

Get more energy, Omega-3 and fiber on Mexican feast-night by adding Organic Burst Chia to your salsa. It's a great way to thicken up your sauce to the perfect dollop, plus you're supporting your digestion! 

Ingredients:

  • 2 tbsp Organic Burst Chia 
  • 350g fresh cherry tomatoes, diced
  • small handful fresh coriander
  • 1/4 cup red onion, diced
  • 1 tsp chopped garlic
  • 1 jalapeño pepper (de-seeded and minced)
  • 1/2 lime, juice + zest
  • pinch sea salt (optional)

Method:

  1. Blitz all ingredients in a food processor until combined but still chunky.
  2. Season as desired
  3. Place in the fridge for 30 mins for chia seeds to absorb liquid.
  4. You're ready to serve!
