Acai Berry & Baobab Breakfast

This super delicious Acai Berry and Baobab Breakfast Bowl recipe by blogger Ella Woodward at "Deliciously Ella" will help kick-start your morning with a boost of Vitamin C, iron, healthy fats and polyphenols for long-lasting energy, great mood and glowing skin.

Ella, over to you:

This is the perfect breakfast to brighten up these grey September mornings. It’s so insanely delicious, amazingly quick to make and so awesomely energizing. This will fill your body with everything you need to fuel a positive morning. It’s particularly rich in antioxidants, as acai has one of the highest levels of antioxidants ever tested, followed by other berries, which means that each spoonful of this bowl protects your body from the free-radical damage that can lead to chronic diseases. The baobab then works to boost your vitamin C and iron levels (did you know that it contains more vitamin C than oranges and more iron that red meat?) while also boosting your calcium, potassium and magnesium levels. Finally the almond butter gives you a delicious spoonful of healthy fats and plant protein so that you’re ready to go for the day! Despite all this goodness the bowl tastes heavenly, so good that the non-healthy eaters I tried it on were obsessed too! One of my favourite things about it is the creamy, velvety texture created by the mix of frozen banana and acai, while the dates, baobab and other berries make it so wonderfully sweet and fruity.

Ingredients - Serves 1

  • 1 frozen banana
  • 1 teaspoon Organic Burst Acai Berry powder
  • 1 teaspoon of Organic Burst Baobab
  • 1 cup of strawberries
  • 1/2 a cup each of blueberries and raspberries
  • 2 medjool dates (pitted)
  • 1 tablespoon of almond butter

Method:

Start by putting everything except the acai into your blender, adding just enough water to cover the blades. Then pull open the acai capsules and pour the powder in. Then blend until smooth, pour into a bowl and add your favorite toppings – I love banana slices with coconut, blueberries, raspberries and a crunchy mix of pumpkin and hemp seeds!
